Ingredients
  

  • 2 cups pecan halves
  • 1 cup soft caramels, unwrapped
  • 2-3 tbsp heavy cream or half-and-half (optional)
  • 1.5-2 cups semi-sweet or milk chocolate chips (or melting wafers)
  • 1 flaky sea salt, crushed nuts, or sprinkles (optional topping)

Method
 

  1. Line a baking sheet with parchment paper. Arrange pecan halves into small clusters of 3–4 pecans each.
  2. In a microwave-safe bowl, add unwrapped caramels and heavy cream if using. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  3. Spoon about 1 teaspoon of melted caramel over each pecan cluster, allowing it to spread slightly.
  4. Let the caramel set for 5–10 minutes, until slightly thickened but still soft.
  5. Melt chocolate chips or wafers in the microwave in 30-second bursts, stirring until smooth.
  6. Spoon melted chocolate over the caramel on each cluster, spreading gently to cover.
  7. Add optional toppings like flaky sea salt, chopped nuts, or festive sprinkles.
  8. Refrigerate for at least 30 minutes, or until chocolate is fully set before serving or packaging.

Notes

Use soft caramels for the smoothest melt. Toast pecans beforehand for added flavor. Work quickly with caramel and chocolate to keep clusters neat. Store in the refrigerator to prevent sticking or melting. Customize with sea salt, nuts, or sprinkles.
