- Place frozen blueberries in a microwave-safe bowl. Microwave on defrost setting (30% power) for 2-3 minutes until softened and releasing their juices. If using fresh blueberries, you can skip this step or lightly mash them.
- In a glass or bowl, start with a layer of blueberries and their juices at the bottom. This creates a beautiful base and prevents the granola from getting soggy.
- Spoon half of the Greek yogurt over the blueberries, creating an even layer.
- Sprinkle half of the granola over the yogurt. Drizzle with half of the honey or your preferred sweetener.
- Add remaining blueberries, yogurt, granola, and finish with a final drizzle of honey on top.
- Enjoy immediately for maximum crunch, or stir everything together for a mixed texture. Refrigerate if making ahead.
Notes
Choose Quality Greek Yogurt: Look for brands with at least 15g of protein per serving and minimal added sugars. Plain Greek yogurt works best so you can control sweetness.
Don't Skip the Juice: The blueberry juice from defrosting adds natural sweetness and beautiful color to your parfait.
Add Granola Last: If meal prepping, store granola separately and add right before eating to maintain crunchiness.
Storage: Assemble parfaits (without granola) in mason jars and store in refrigerator for up to 3 days. Add granola just before eating.
