Cheeseburger Meatloaf

This Cheeseburger Meatloaf is the ultimate family-friendly comfort food! A juicy ground beef loaf is stuffed with a core of melted cheddar cheese and crispy bacon, then topped with a sweet ketchup glaze. It's a fun and delicious twist on two classics. Ingredients
  

  • 2 lbs ground beef (80/20 blend)
  • 1 cup breadcrumbs
  • 0.25 cup ketchup, plus more for glaze
  • 2 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 0.5 cup yellow onion, finely chopped
  • 2 large eggs, beaten
  • Salt and black pepper
  • 1 cup sharp cheddar cheese, shredded
  • 4 slices bacon, cooked crisp and crumbled

Equipment

  • 9x5-inch Loaf Pan Standard size for meatloaf.
  • parchment paper For easy removal and cleanup.

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper, leaving an overhang on the long sides.
  2. In a large bowl, combine ground beef, breadcrumbs, ¼ cup ketchup, mustard, Worcestershire sauce, onion, eggs, salt, and pepper. Mix gently with your hands until just combined.
  3. Press half of the meat mixture evenly into the bottom of the prepared loaf pan.
  4. Sprinkle the shredded cheese and crumbled bacon evenly over the meat layer, leaving a small border around the edges.
  5. Top with the remaining meat mixture, pressing gently to seal the edges and encase the filling completely.
  6. Brush the top liberally with a thick layer of ketchup. Place the loaf pan on a baking sheet and bake for 55-65 minutes, or until internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest in the pan for 10 minutes. Then, use the parchment paper to lift it out, slice, and serve.

Notes

Pro Tips: For a juicy texture, mix the ingredients with your hands just until combined to avoid overworking the meat. Letting the meatloaf rest for a full 10 minutes after baking is non-negotiable for perfect, clean slices. For an extra caramelized glaze, brush with an additional thin layer of ketchup during the last 10 minutes of baking. Place the loaf pan on a baking sheet to catch any drips.
