Ingredients

  • 2 lbs ground beef (80/20)
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 2 cup shredded cheddar cheese
  • 0.5 cup dill pickle slices
  • 2 tbsp sesame seeds
  • 0.25 cup ketchup
  • 2 tbsp yellow mustard
  • 0.5 cup mayonnaise
  • 0.25 cup ketchup
  • 2 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • 0.5 tsp garlic powder

Equipment

  • 9×13-inch baking dish Essential for creating the perfect slab thickness.

Method

  1. Preheat oven to 375°F. Line a 9x13 inch baking dish with parchment paper. In a large bowl, mix ground beef, eggs, breadcrumbs, onion, garlic, salt, pepper, and paprika until combined.
  2. Press meat mixture evenly into the prepared baking dish. Mix ¼ cup ketchup and mustard, then spread over the meat.
  3. Bake for 25 minutes. Remove from oven (meat will have shrunk). Top evenly with shredded cheese, pickle slices, and sesame seeds.
  4. Return to oven and bake 10-15 more minutes until cheese is bubbly and meat is cooked through (160°F internal temp).
  5. Let slab rest 5-10 minutes. Use parchment to lift it onto a cutting board. Slice into squares. Whisk special sauce ingredients and serve alongside.

Notes

Pro Tips: For easy cleanup and removal, line your baking dish with parchment paper, leaving overhang on the sides. Mix the meat gently until just combined to keep the texture tender. Let the baked slab rest for 5-10 minutes before slicing—this helps the juices redistribute and makes cleaner cuts. Customize with your favorite burger toppings like bacon, diced tomatoes, or sautéed mushrooms before adding the cheese layer.
