  • 0.5 cup rolled oats (old-fashioned)
  • 0.5 cup canned full-fat coconut milk
  • 0.5 cup water
  • 1 pinch sea salt
  • 1 tbsp almond butter, divided
  • 1 tbsp chia seeds (optional)

Method
 

  1. In a saucepan, bring coconut milk, water, and salt to a boil.
  2. Reduce heat to low, stir in oats. Simmer for 10-12 mins, stirring occasionally, until creamy.
  3. Halfway through, stir in 1 tsp almond butter and optional chia seeds.
  4. Pour oatmeal into a bowl. Top with remaining almond butter and your favorite toppings like banana and berries.
