Combining the gooey goodness of grilled cheese with the hearty satisfaction of a burrito, this Grilled Cheese Burrito is crispy on the outside and creamy inside — packed with seasoned beef, rice, cheese, and sour cream. Inspired by Taco Bell’s cult favorite, it’s pure comfort food made easy at home.

Ingredients
  

  • 1 lb ground beef (or chicken)
  • 1 packet taco seasoning (or homemade mix)
  • 1 cup cooked rice
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • ½ cup shredded mozzarella or Monterey Jack
  • ½ cup nacho cheese sauce (optional)
  • ½ cup diced tomatoes (optional)
  • 4 large flour tortillas
  • ½ cup shredded cheddar cheese (for coating)
  • ½ cup shredded mozzarella (for coating)
  • 1 tbsp butter

Method
 

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then add taco seasoning and a little water as directed on the packet. Simmer for 3–4 minutes until the mixture thickens.
  2. Lay out each tortilla and layer rice, taco meat, sour cream, shredded cheese, and optional toppings like tomatoes or nacho cheese. Roll each one tightly into a burrito.
  3. In a clean skillet, melt butter over medium heat. Sprinkle a small handful of cheddar and mozzarella directly onto the pan in a rectangle about the size of a burrito.
  4. Place the burrito seam-side down on the melted cheese. Let it cook for 1–2 minutes until the cheese forms a golden crust. Carefully flip and grill the other side briefly to warm through.
  5. Slice in half and serve warm with salsa, guacamole, or sour cream.

Notes

Don’t overfill your burrito — too much filling makes it hard to roll and grill evenly. Use a nonstick skillet for the cheese crust, and flip carefully for a perfect golden finish. Customize with grilled chicken, beans, or veggies for a lighter version. Reheat in a skillet to maintain crispiness — avoid the microwave!
