Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 5–6 cloves garlic, minced
  • 3 cups vegetable or chicken broth
  • 1 ½ cups milk (whole or 2%)
  • 8 oz spaghetti or fettuccine
  • ½ cup grated Parmesan cheese
  • salt and freshly ground black pepper, to taste
  • ½ tsp chili flakes (optional)
  • 2 tbsp chopped parsley (for garnish)

Equipment

  • large pot or deep skillet
  • wooden spoon
  • measuring cups and spoons
  • grater
  • serving tongs

Method

  1. In a large pot or deep skillet, melt butter with olive oil over medium heat. Add minced garlic and cook for 1–2 minutes, stirring constantly, until fragrant but not browned.
  2. Pour in the broth and milk, then bring to a simmer. Add the pasta and reduce heat to medium-low. Cook uncovered, stirring occasionally, until pasta is tender and most liquid is absorbed — about 10–12 minutes.
  3. Once the pasta is cooked, reduce heat to low. Stir in grated Parmesan cheese until melted and smooth. Add a splash of milk or broth if sauce is too thick.
  4. Season with salt, pepper, and chili flakes (if using). Garnish with parsley and extra Parmesan. Serve immediately while warm and creamy.

Notes

Use freshly grated Parmesan for the smoothest sauce. Stir frequently to prevent pasta from sticking. Add cream for extra richness or toss in cooked chicken, shrimp, or bacon for more protein. Reheat gently with a splash of milk to restore creaminess.
