Sweet Chili Chicken Wraps

Ingredients
  

  • 2 cups cooked chicken breast, shredded or sliced
  • 1/3 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp lime juice
  • 4 large flour tortillas or whole wheat wraps
  • 1 cup shredded lettuce
  • ½ cup grated carrots
  • ½ red bell pepper thinly sliced
  • ¼ cup red cabbage, shredded
  • ¼ cup chopped cilantro
  • ¼ cup mayonnaise or Greek yogurt (optional)

Method
 

  1. In a large skillet over medium heat, combine cooked chicken, sweet chili sauce, soy sauce, sesame oil, garlic, and lime juice. Stir and cook for 3–4 minutes until the sauce thickens slightly and coats the chicken. Remove from heat and let cool for a few minutes.
  2. Lay out each tortilla on a flat surface. Spread a small amount of mayonnaise or Greek yogurt (if using) down the center. Layer with lettuce, carrots, red bell pepper, cabbage, and cilantro. Add the sweet chili chicken mixture on top.
  3. Fold in the sides of the tortilla and roll tightly. Slice in half if desired and serve immediately.

Notes

Use rotisserie chicken for a faster prep. Add cucumber or purple cabbage for extra crunch. Mix in sriracha with the sweet chili sauce if you want more spice. Assemble wraps just before serving to keep them fresh and crisp.
